Goji Berry Smoothie Recipe

Soak 1 cup of dried goji berries for at least one hour and combine it after with 1 cup of fresh or frozen blueberries, 2 bananas, 2 teaspoons of cocoa powder, and 1-2 cups almond milk or even the water you used for soaking the goji berries. Put them in the blender until evenly smooth.
Pumpkin and Goji Fritter

75 grams dried Goji
500 grams Fresh pumpkin
4 tbsp. Caster sugar
125 grams self-raising flour
1 teaspoon orange rind (or a tablespoon of mixed peel, finely chopped)
½ teaspoon ground all-spice
2 eggs (separated)
Sunflower oil
Ground cinnamon
Soak the dried goji berries in water for at least one hour. On the other hand, chop the pumpkin into small cubes with the seeds separated. Boil the pumpkin for 10 minutes or until tender. Drain the water and puree or mash the pumpkin.
Drain the goji berries and mix it with pumpkin mixture. Add 2 tablespoons of sugar, flour, orange, egg yolks, and all-spice. Mix it well together. Beat the egg whites until stiff, then fold into pumpkin mixture.
Heat the oil in frying pan then put scoops of mixture and cook it for 8-10 minutes until they’re golden brown. Prepare some kitchen towel on a plate to absorb the oil from the cooked fritters. Dust with cinnamon and sugar.
Goji Berry Trail Mix and Energy Bar

Combine 1 cup of dried goji berries, 1/2 cup of raw chocolate nibs, 1 cup of raw pecans, 1 cup of raw walnuts, and 1/2 coconut shreds. Mix it very well and store this scrumptious trail mix in an air-tight glass container.
But if you want to make a delicious energy bar, crush the walnuts and pecans and add 1 cup of oats and three tablespoons of honey to the mix. Add a little water, too. Stir it with a spoon then press the mixture into a lightly oiled baking tray. Better use olive oil here. Put the tray in the refrigerator for an hour to set, then cut into small squares.
